Noraisah’s dish wins judges’ hearts

NORAISAH Abdul Tee’s Borneo Lamingtons dish was a show-stealer, earning her the grand prize in the Taste of Australia in Brunei ‘Culinary Challenge,’ held at the Radisson Hotel. Forty dishes were entered into the competition.

High Commissioner of Australia to Brunei Darussalam Nicola Rosenblum presented the prizes to the winners.

Todd Moses, Head Chef from the award-winning French Saloon in Melbourne, along with local foodie, Siti Kaprawi, judged the dishes, which had to combine Australian and Brunei ingredients or flavours.

Winning entries included a Chocolate and Strawberry Pavlova; a Rack of Lamb with Local Herbs, Mash and Salad; Red Snapper and Nasi Pandan with Ikan Merah Kerisik and Sambal Mangga; and Almond Cheesecake with Chocolate Ganache, Caramelised Bananas and Macadamias.

Noraisah bagged a return air ticket to Melbourne, courtesy of taste partner Royal Brunei Airlines (RB) and an exclusive dinner experience at Chef Moses’ French Saloon.

“The grand prize winner used an innovative combination of Australian flour, milk, butter and chocolate together with Bruneian sugar, salt, pandan, bunga telang and Rosella.

“Both Chef Moses and Siti were impressed by Noraisah’s use of local flavours in an iconic Australian dish,” Rosenblum said.

Chef Moses also demonstrated his culinary skills, preparing a range of dishes using premium Australian produce that included Spencer Gul Hirasama Kingfish raised in the icy, crystal-clear waters of South Australia’s Spencer Gulf, and Australian Wagyu known for its melt-in-your-mouth texture, depth of flavour and tenderness.

Chef Moses used local ingredients, including Brunei’s world-renowned blue shrimp, and vegetables selected from Tamu Kianggeh.

The Australian High Commission in Brunei Darussalam and Australian Trade and Investment Commission (Austrade) organised Taste of Australia in Brunei to showcase the range of Australian food and beverage products available in the Sultanate, and to introduce exciting new products from Australia.

The Australian High Commissioner was pleased to welcome many importers, distributors and retailers to the Taste of Australia in Brunei, who showcased a range of Australian products – from everyone’s favourite Milo, to dairy products and fresh fruit and vegetables, along with new products such as Bondi Chai – Australia’s most awarded chai latte.
